My baby's 5th month cake

Ube Overload Cake (Red Ribbon Bakeshop Inspired) Every 21st of the month, me and my husband, celebrates our baby's "birthday". We will celebrate it until his real 1st birthday, so for his 5th month, I decided to bake a cake for my little one.  The recipe that I used is from a Youtube channel named Cooking with Kurt. He really gave clear instructions, it was simple and easy to learn. The only difference that I did was I used the Ube Halaya that I made from scratch while he used a store bought Ube Halaya. It was my first time baking a cake from scratch, I always just do it with boxed cake mixes. I was so afraid of making a mistake, but it turned out to be soft, light and with just right amount of sweetness. For now, my baby can't taste it yet but when he grows up, I know I can make it anytime he wants. Thank you for reading my post!

Ube baby!

When I was a kid, I only knew Ube (Purple Yam) if somebody went to Baguio City, Philippines. Baguio City is known for Ube, Lengua de Gato, Walis Tambo (Broom), Mines View Park and so much more. I remember my dad buying this jar of Ube Jam from Good Shepherd when we went to Baguio, the creaminess and sweetness never fails me plus the Purple Color, who can resist that. Fast Forward today, It has been 7 years since I went here to United States, still hadn't had any Ube Jam/Ube Halaya that is so close to the one I had back home. So I made one, this recipe came from a video that I came across on facebook, check out kawalingpinoy.com and search for Halayang Ube. I did not use an actual Ube fruit for this, I used frozen grated Ube from an asian store. After 1000 hours of stirring Ube, just kidding :), my craving is satisfied. I never thought I can make Ube Halaya, the 10 year old me is so happy.
